Water is known as "Nature's Universal Solvent" because its polar structure allows it to dissolve virtually a bit of everything it comes into contact with - metals, rocks, waste matter, gases, dust and other foreign substances.
There are numerous variations in water from one location to another, and even seasonal changes at the same location. Left untreated, water can be highly disruptive to the quality of the beverage & operation of the equipment. Excess sodium or high alkalinity results in a bitter drink. An 1/8" of scale increases a machine's energy usage by more than 20%.
