Managing the Water Variable

Gone are the days of desiring a standard Cup ‘o Joe. Now-a-days, coffee purists and roasters seek a quality brew, with memorable characteristics, such as: aroma, flavor, body and finish. At the core of today’s Specialty Coffee Industry is the desire to craft a product that embodies quality and consistency.

No matter how you choose to enjoy your coffee, there is one constant – it’s 98% water. Water is known as “Nature’s Universal Solvent” because its polar structure allows it to dissolve virtually a bit of everything it comes into contact with – metals, rocks, waste matter, gases, dust and other foreign substances.

There are numerous variations in water from one location to another, and even seasonal changes at the same location. Left untreated, water can be highly disruptive to the quality of the beverage & operation of the equipment. Excess sodium or high alkalinity results in a bitter drink. An 1/8″ of scale increases a machine’s energy usage by more than 20%.

Few things are more costly than a dissatisfied customer; however, problematic equipment may come close. Crafting a quality beverage, and doing it consistently, requires managing an array of variables.
